Saffron-Vanilla-Pear ice cream


Saffron-Vanilla-Pear ice cream

4 Egg Yolks
1/4 cup sugar
1 1/4 cups milk
Large pinch of Saffron
1/2 vanilla bean
1/4 cup heavy cream
1 diced pear

Beat the Egg yolks and Sugar together until light and fluffy. Place the milk in a heavy bottomed saucepan and heat with the saffron and vanilla. Pour the hot milk slowly into the beaten eggs so you don't scramble the yolks. Return the mixture to the saucepan and cook until the custard thickens. Strain the Custard to remove the vanilla bean and saffrom strands. Stir in the cream and the diced pear. Allow the custard to chill for several hours. Freeze according to the instructions for your ice cream maker.

Gemgirl and I adapted this recipe from an IceCream cookbook I had. We both Loved the flavour but the Husband was less then enamoured. The colour was amazing, what with the yolks and saffron.

Makes 4 servings.
