Birthday Cake

One of the ladies at work had a Birthday today. I was in charge of the cake.

I wanted to do something nice, not just a boxed mix or a cake from the store. So I made a sour cream chocolate cake from "Feast" By Nigella Lawson and frosted it with marshmallow-y fluffy icing. Some people call it boiled icing, some call it fluff. I call it yum!!

2 Egg whites
3/4 cup white sugar
1/3 cup corn syrup
1/4 tsp cream of tartar
Pinch of Salt
1 tsp Vanilla

Whip the first 5 ingredients in a bowl set over boiling water until they are light and fluffy. (You need a beater for this, a whisk just wont cut it.)

Remove from the heat and continue to beat, mixing in the vanilla. This frosts a 2 layer 8 or 9 inch cake with a bit left over. It sets up well and holds it's shape well.

Plus it looks cool! I added the sprinkles just because I had them, and they are fun and celebratory.

The cake was devoured. Now they want me to make another for next week!
