Welcome to SHF 18! This time around the event is hosted by Lick the Spoon, and the Theme is Liquor! (Something I can REALLY get behind.)

I raided the liquor basket (we have no cabinet so all the booze lives in a basket.) and looked for inspiration. Grasshopper pie? Kahlua cheesecake?
No, Ice Cream...... Amaretto Ice Cream!!

Originally I had wanted to use peaches in this recipe but since it's April no ripe peaches are to be found. But Mango! Mango can be located!

Mango and Amaretto Ice Cream

1 1/2 cups Half and Half
1 cup 35% cream
3/4 cup sugar
1 vanilla bean split and scraped
Flesh from 1 mango, diced
1/4 cup Amaretto

Place the first 4 ingredients in a sauce pan and bring to a gentle simmer over low heat. Remove from the heat and allow to cool in the fridge, preferably overnight.

Stir in the Mango and Amaretto and pour into an ice cream maker. Process according to your machines instructions.

Eat! Eat! Eat!

What luck, I just happen to have a mango in the fridge and I've been trying to find a good recipe for it. I'm printing this bad boy recipe out and makin' me some ice cream.
