I wanted to show you just how darn pink my dinner last night was. But I can't get the picture to show. You will have to take my word for it.

5 small beets, peeled and grated
1 onion chopped
3 cloves of garlic minced
a few tablespoons of chicken stock or pasta water
3/4 cup sour cream
Parmesan cheese to taste
cooked pasta

Saute the onions and garlic until golden. Add the beets and the stock and simmer until the beets are cooked. Toss the cooked beets, pasta and sour cream together and top with parmesan.
Serves 2

Watch out the next morning for the after effects of consuming that many beets.
