Today I made a batch of Lemon Squares. Mmmm Lemon squares.......
Of course I am still on the diet so none for me, but the Husband and Dad can eat them up.
Base:
1 Cup flour
1/2 cut butter
1/4 sugar
Cream the butter and sugar. Add the flour and combine to a crunbly texture.
Press into the bottom of a greased and floured 8" pan. Bake a 325C for 20 minutes or until golden.
Topping:
2 tbsp flour
1/2 tsp baking powder
1 Cup Sugar
3 tbsp Lemon Juice
2 eggs
zest from 2 lemons
Combine all ingredients. Pour over baked base and bake for a further 25 minutes.
Let cool and remove from pan.
Eat and enjoy!
