Canuck Corn Bread

Sorry - no picture.

Preheat your oven to 400F. Take an 8 inch cast iron skillet and grease it well. Place it in the oven to heat while you make the batter.

Sift together -
1 cup flour
3 tsp baking powder
1 tsp salt
2 tbsp sugar

Add -
1 cup corn meal

Combine -
2 eggs
1 cup milk
1/4 oil

Add -
Liquid to dry ingredients and mix until combined.

Optional -
1 small can chopped green chilies
1/2 cup frozen or canned corn niblets

Pour into your preheated skillet and let it bake for 30 minutes.
Serve with butter and try not to eat the whole pan in one go.

We had this with BBQ pork chops. The leftovers I fried up with sausage and eggs for breakfast.
