Cheddar-Green Chile Corn Muffin

I made these up to accompany some BBQ pork Chops and roasted asparagus. I had bought a box of JIFFY mix the last time I went to the states with Randi.
I love the combo of chile and cheese and corn. It feels very southwest to me. And also extremely yummy. The recipe made six. We each had two at dinner and I ate the rest for breakfast the next day. (Which made the Husband made because I didn't save him one)
I think I will make these again but from scratch next time. You never know exactly whats in a mix.
